Super Bowl Set

The two games yesterday were basically terrific. The Eagles blew out the Minnesota Vikings, 38-7, in what was a surprise outcome. Not that the Eagles won, but that the score was so lopsided. The first game, between the Patriots and Jaguars was a typical New England victory in a big game. Being down by 10 points in the fourth quarter is nothing new for Tom Brady and the New England football machine. They somehow find an extra gear or some hidden energy to pull out games that most teams would lose. I suspect that the same thing will happen in the Super Bowl. As much as I love the Eagles and want them to win, the New England football machine has too much talent and experience to lose. I hope I am wrong.

Yesterday afternoon was another chance to experiment with our Instant Pot. I made some navy bean soup that turned out excellent!:



I am a firm believer in this cooking device. I'm sure we will be using it for a lot more easy and quick meals. In 30 minutes, we had a very delicious meal that used to take hours, especially if you soaked the beans overnight which we did not have to do with this recipe. It's a winner!

We start another week today which will be cooler than what we have been used to. We don't expect to hit the 70's until mid-week and then, only for a couple days before heading back to the 60's. Enjoy it though, as many areas in the country are still below freezing...
